This coffee has a rich history dating back to its commercialization by the Dutch in the 1700’s. Today, coffee production in Indonesia, is a combination of small backyard farmers and large scale farms. While the newer larger farms are producing homogeneous coffees in great volume (using a washed process to cure the bean and prepare it for shipping), many of the small backyard family farms still use the traditional dry method, and allow the fruit of the coffee cherry to dry on the seeds. It’s thought that this old world dry process, in combination with moist tropical air in the cargo hold of the ships bringing the coffee West, helps produce and enhance the earthy flavors found in great Sumatran coffees.
